Printer installation can get to be a bit of trial and error - quite often with success.
Firstly you need the current ppd file for your printer, I suspect Epson call it a linux driver and it will probably be wrapped up in some sort of *nixy package which you will need to extract it from.
You need all the necessary bits of cups installed.
Then use Computer -> Printers -> Manage Printers -> File -> Import PPD...
This should clean unnecessary bits that "our" cups does not understand from the ppd file, set the codepage correctly and import the result of those processes into the PSPRINT.DRV driver package enabling you to select your printer during the Create Printer process.
To check if the above is successful:
- Is your printer listed here
http://localhost:631/printers/ - If listed Click on the printer name and select Print Test Page from the Maintenance dropdown list
