It is becoming a race to see which devices are less expensive. You may find that a 512 GB (not MB) SSD is more expensive than a 1 TB SSD. More important is to watch the performance numbers.
Then it depends on the capabilities of the host machine. Can it boot from NVME? If so, consider getting an NVME drive, which is likely no more expensive, but will be much faster. The size is the least of your worries. Anything over 128 GB is likely lots, but you will probably want to add a different OS to the mix (it is generally required to have windows installed, so you can do things like BIOS updates).
FWIW, I put a 1 TB NVME M.2 stick, in my newest machine (which can boot from NVME). It works very well, and was no more expensive than a 512 GB AHCI SSD (a couple of years ago now). I chose CRUCIAL brand, for performance reasons. So far, no troubles. I also use CRUCIAL AHCI SSDs for machines that can't boot from NVME.
