Weasel is a POP3 and SMTP mail server, and is optional shareware supporting a single mail domain. Registration of the "Pro" version lets you host multiple domains, and will also enable IMAP once a production version of the IMAP add-on is released. (The present version of the IMAP addon is not recommended for production work, because of a serious bug.)
